Flowers and leaves in pot pourri
• Traditionally, flowers dominate pot pourri mixtures, with lavender and roses being the most commonly used as they retain their perfume the longest. Other flowers suitable for use in pot pourri are: elder, freesias, honeysuckle, jasmine, lilac, lime, orange blossom and violets.
• Add cornflowers, larkspur, poppy or hibiscus flowers for a splash of colour.
• Aromatic leaves such as basil, bay, mint, rosemary, sage, marjoram, tarragon and thyme are other essential ingredients. Choose herbs that complement your chosen flowers in scent and colour.
• Spices, dry citrus peel, aromatic roots and wood chips can all add colour and scent to a well-balanced mix.
